- 1 1/2 cups cracker meal
- 1 tablespoon dried parsley flakes
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 large eggs, beaten
- 1/4 cup hot sauce
- 2 pounds catfish fillets
- 1/2 cup vegetable oil
Directions

1Stir together first 4 ingredients. Whisk together eggs and hot sauce.

2Cut fillets into 2-inch pieces; dip in egg mixture, and dredge in cracker meal mixture.

3Cook fish, in batches, in hot oil in a large skillet over medium-high heat 1 minute on all sides or until golden; drain on paper towels. Place fish on a wire rack in a jelly-roll pan, and keep warm in a 200° oven.
