- 4 large baking potatoes
- 1 (8 oz.) pkg. cream cheese, diced
- 1 medium onion, finely chopped
- 3 eggs
- 2 Tbsp. butter
- 3 Tbsp. flour
- 1 tsp. salt
- 1/4 tsp. pepper
Directions

1Bake potatoes at 400° for 40 to 50 minutes.

2Halve them and scoop out insides.

3Rice or grate potatoes into large bowl.

4Add cream cheese and beat.

5Add remaining ingredients and beat until smooth.

6Spoon filling back into skins.

7Reheat for about 20 minutes or until tops are browned slightly.

8After filling is put into skins, they may be frozen.
