Buffet Mashed Potatoes

  • 4 large baking potatoes
  • 1 (8 oz.) pkg. cream cheese, diced
  • 1 medium onion, finely chopped
  • 3 eggs
  • 2 Tbsp. butter
  • 3 Tbsp. flour
  • 1 tsp. salt
  • 1/4 tsp. pepper

Directions

    Bake potatoes at 400° for 40 to 50 minutes.

    Halve them and scoop out insides.

    Rice or grate potatoes into large bowl.

    Add cream cheese and beat.

    Add remaining ingredients and beat until smooth.

    Spoon filling back into skins.

    Reheat for about 20 minutes or until tops are browned slightly.

    After filling is put into skins, they may be frozen.
