Buffet Stroganoff

  • 2 lb. boneless chicken, cut into 1 inch strips
  • 1 1/2 c. mushroom pieces
  • 1/2 c. green peppers, sliced
  • 1/2 c. onions, sliced
  • 1/2 c. butter
  • 2 c. beef stock
  • 1/4 c. flour
  • 1 1/2 c. sour cream
  • 1 tsp. salt
  • 1/2 tsp. pepper

    Saute beef in butter until brown; add mushrooms, peppers and onions.

    Saute.

    Add beef stock (if beef stock is made from cubes, reduce salt to 1/2 teaspoon).

    Simmer 15 minutes; mix flour with sour cream.

    Add to beef mixture, stirring well to thicken. Simmer an additional 15 minutes.

    Serve over hot buttered noodles.
