Bulgur / Quinoa Salad

Ingredients

  • 1/2 cup bulgur wheat.
  • 1/2 cup quinoa
  • 1 daikon radish
  • 1 small (deseeded) cucumber
  • 2-3 small tomatoes
  • 1 bunch fresh cilantro
  • 2-3 oz fresh mint
  • 3 garlic cloves
  • 1 lemon or lime
  • 5 tbsp olive oil

Directions

    Boil the presoaked quinoa & bulgur for about 8-10 min. drain, rinse and cool.

    Add olive oil and toss.

    In a mandolin finely slice (Julianne) 1 small peeled cucumber and 1 peeled daikon radish.

    Add it all to bulgur and toss.

    Chop your garlic and cilantro, and add to bulgur along with squeezed limejuice.

    Cube tomatoes, add mint, salt, pepper and toss.
