Bulgur / Quinoa Salad

Ingredients
- 1/2 cup bulgur wheat.
- 1/2 cup quinoa
- 1 daikon radish
- 1 small (deseeded) cucumber
- 2-3 small tomatoes
- 1 bunch fresh cilantro
- 2-3 oz fresh mint
- 3 garlic cloves
- 1 lemon or lime
- 5 tbsp olive oil
Directions

1Boil the presoaked quinoa & bulgur for about 8-10 min. drain, rinse and cool.

2Add olive oil and toss.

3In a mandolin finely slice (Julianne) 1 small peeled cucumber and 1 peeled daikon radish.

4Add it all to bulgur and toss.

5Chop your garlic and cilantro, and add to bulgur along with squeezed limejuice.

6Cube tomatoes, add mint, salt, pepper and toss.
