  • 1 cup burghul
  • 3 Tbs. oil
  • 1 onion
  • 3 garlic cloves
  • 1 sweet potato - peeled and cubed
  • 1 carrot - cubed
  • 150 grams pumpkin - cubed
  • 1/2 cup roasted hazelnuts - crushed
  • 2 Tbs. toasted sesame seeds
  • 1/2 cup raisins/craisins
  • 1/2 tsp. cinnamon/baharat
  • salt
  • 100 grams spinach

Directions

    Soak burghul 1 hr., drain

    Brown onion and garlic

    Add veggies and stir-fry 8 minutes

    Add hazelnuts, seeds, raisins, salt and spices. Stir-fry 3 minutes.

    Add burghul and spinach, cook 3 minutes
