- 1 cup butter softened
- 1/2 cup sugar
- 1 each eggs
- 1 tablespoon vanilla extract
- 3 cups flour, all-purpose sifted
- 1/2 teaspoon baking powder
Directions

1Cream butter and sugar together in mixing bowl until light and fluffy.

2Add egg and vanilla; beat well.

3Sift flour and baking powder together; blend into creamed mixture.

4Cover and refrigerate for 1 hour.

5Preheat oven to 425F (220C).

6Roll out a small amount of dough to 18 inch thickness on lightly floured board or pastry cloth.

7Keep remaining dough refrigerated until ready to use.

8Cut into rounds with a 2 1/2-inch cutter; arrange one inch apart on ungreased baking sheet.

9Bake for 5 to 7 minutes or until light golden brown.

10Cool on wire racks.
