- 2 c. flour
- 3/4 tsp. baking soda
- 1/2 tsp. salt
- 2/3 c. shortening
- 1 c. sugar
- 3 eggs, separated
- 1 tsp. vanilla
- 1/2 tsp. lemon extract
- 1/2 c. buttermilk
- 2 Tbsp. distilled vinegar
- Orange Frosting (recipe follows)
Directions

1Sift flour, baking soda and salt together.

2Cream shortening; add sugar gradually, creaming until light and fluffy.

3Add egg yolks; beat until very light.

4Add vanilla and lemon extract; blend well.

5Add dry ingredients alternately with combined buttermilk and vinegar.

6Beat until batter is smooth.

7Fold in stiffly beaten egg whites.

8Pour into greased 7 x 10 x 2-inch loaf pan or 2 (8-inch) layer cake pans.

9Bake loaf at 350° for 40 to 45 minutes; layers at 375° for 25 to 30 minutes.

10Frost with Orange Frosting.
