  • 2 Tbsp. vegetable oil
  • 1 c. self-rising yellow cornmeal
  • 1 Tbsp. self-rising flour
  • 1/4 tsp. baking soda
  • 1 c. buttermilk
  • 1 large egg
  • 1 tsp. sugar

Directions

    Place oil in an 8-inch iron skillet. Heat in 450° oven for 5 minutes. Combine cornmeal, flour, soda and sugar in a medium mixing bowl. Stir lightly beaten egg and buttermilk into dry mixture and mix just enough to moisten ingredients. Pour into hot pan; bake about 20 minutes, until golden brown.
