  • 1 c. corn meal
  • 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 egg
  • 1/4 tsp. salt
  • buttermilk as needed
  • 1/2 tsp. sugar

Directions

    Mix dry ingredients, adding whole egg; blend mixture by adding enough buttermilk to make medium batter.

    Pour into hot, greased (bacon drippings preferred) muffin pans.

    Bake at 450° or 500° for about 15 minutes or until brown.

    Makes enough for 8 muffins.
