Buttermilk Fruit Pie

Ingredients
- 1/2 c. soft butter
- 1 c. honey
- 3 eggs, separated
- 3 Tbsp. cornstarch
- 1 1/2 c. buttermilk
- 1 tsp. lemon rind
- 1 Tbsp. lemon juice
- 1 1/2 c. peeled, sliced and cooked peaches or plums
- ground nutmeg
Directions

1Preheat oven to 350°.

2Roll out pastry and place in pie pan. In large bowl, beat honey, butter and egg yolks together well. Dissolve cornstarch in buttermilk and add to butter mixture along with lemon juice and rind.

3Mix in fruit.

4Beat egg whites until stiff and then fold into rest of filling carefully.

5Turn into unbaked pie crust, then sprinkle with nutmeg.

6Bake at 350° for 20 minutes.

7Reduce heat to 300° and bake for 15 to 20 more minutes until set.

8Cool before serving.
