- 1 (9-inch) baked pastry shell
- 3 eggs, separated
- 1 c. brown sugar, packed
- 3 Tbsp. melted butter
- 3 Tbsp. flour (well rounded)
- rind of 1 medium lemon
- juice of 1 medium lemon
- 2 c. buttermilk
- whipped cream
Directions

1Blend sugar and flour.

2Add egg yolks, butter, lemon rind, lemon juice and buttermilk.

3Cook in double boiler about 15 minutes, stirring constantly.

4Beat egg whites very stiff; fold into cooked mixture while still hot.

5Set aside to cool, then pour into 9-inch baked pastry shell.

6Serve with whipped cream.
