Buttermilk Pound Cake

  • 1 c. vegetable oil
  • 3 c. sugar
  • 6 eggs, separated
  • 3 c. self-rising flour
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. buttermilk
  • 1 tsp. lemon flavoring

Directions

    Preheat oven to 325°.

    Cream together oil and sugar.

    Add egg yolks.

    In a separate bowl, sift together flour, soda and salt. Add buttermilk and lemon flavoring.

    Mix well and add egg yolks. Beat egg whites until peaks form and fold these into batter.

    Pour into tube pan that has been sprayed with Pam.

    Bake 1 hour and 20 minutes.

    Do not open oven during baking.
