- 1 1/2 cups all-purpose flour
- 1/2 cup yellow cornmeal
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- Pinch of kosher salt
- 1 1/2 cups well-shaken buttermilk
- 8 tablespoons (1 stick) unsalted butter, melted
- 3 large eggs
Directions

1Preheat the oven to 200F.

2Preheat a waffle iron and spray lightly with vegetable oil.

3Combine the flour, cornmeal, sugar, baking powder, baking soda, and salt in a large bowl and stir to mix.

4Whisk the buttermilk, butter, and eggs in a separate bowl.

5Add the buttermilk-egg mixture to the flour mixture and stir just to combine; do not overmix.

6Pour about 3/4 cup of the batter into the bottom of the waffle iron, close the lid, and cook for about 4 minutes, until the waffle is golden brown and crisp.

7Transfer to a baking sheet and place in the oven to keep warm while cooking the remaining waffles.
