Butternut Squash Pie

  • 1/2 stick butter
  • 2 Tbsp. flour
  • 3/4 c. sugar
  • 2 eggs, beaten
  • 1 can evaporated milk
  • 1 tsp. vanilla
  • 1 baked pie shell

Directions

    Boil the butternut squash until soft, then mash while hot. Add butter, flour and sugar.

    Mix eggs with some of the hot ingredients, then add to all of mixture.

    Add milk and vanilla. Pour into unbaked pie shell.

    Bake 1 hour in 350° oven.
