  • 3 c. cooked, mashed butternut squash
  • 1/4 c. evaporated skim milk
  • 2 Tbsp. flour
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper
  • 1 Tbsp. sugar
  • 1 Tbsp. grated orange rind
  • 1/2 tsp. grated lemon rind
  • 2 Tbsp. diet margarine
  • 2 eggs, beaten (you can substitute Egg Beaters)

Directions

    Combine all ingredients and place in a sprayed 1-quart casserole.

    Place in a pan of hot water.

    Bake at 350° for 50 minutes or until center is firm.

    Great with chicken or turkey.
