- 3 c. cooked, mashed butternut squash
- 1/4 c. evaporated skim milk
- 2 Tbsp. flour
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 1 Tbsp. sugar
- 1 Tbsp. grated orange rind
- 1/2 tsp. grated lemon rind
- 2 Tbsp. diet margarine
- 2 eggs, beaten (you can substitute Egg Beaters)
Directions

1Combine all ingredients and place in a sprayed 1-quart casserole.

2Place in a pan of hot water.

3Bake at 350° for 50 minutes or until center is firm.
