- 1 cup firmly packed light brown sugar
- 1/4 cup light corn syrup
- 1/2 stick (1/4 cup) unsalted butter
- 1/2 cup heavy cream
- 1 1/2 teaspoons vanilla
- 1/4 teaspoon fresh lemon juice
Directions

1In a small heavy saucepan combine sugar, corn syrup, butter, and a pinch of salt and cook over moderate heat, stirring, until sugar is dissolved.

2Boil syrup, without stirring, until it registers 280F.

3on a candy thermometer, about 5 minutes.

4Remove pan from heat and stir in cream, vanilla, and lemon juice, stirring until smooth.

5Sauce will thicken as it cools.

6Sauce keeps, covered and chilled, 3 weeks.

7Serve sauce warm or at room temperature over ice cream.
