- 4 medium white potatoes, peeled and coarsely shredded
- 1 small onion, grated
- 1 egg
- 1/3 c. all-purpose flour
- 1 1/2 tsp. salt
- dash of pepper
- 2 Tbsp. oil (Crisco)
Directions

1Mix potatoes, onion, egg, flour, salt and pepper in mixing bowl.

2Mix well.

3Heat oil in large skillet.

4Spoon 1/4 cup potato mixture into skillet for each of 4 pancakes.

5Flatten with spatula.

6Cook over medium heat 10 to 15 minutes, or until golden brown, turning over once.

7Drain on paper towels.

8Add additional oil, if needed.

9Repeat with remaining potato mixture.

10Makes up to 6 servings.
