Cabbage Casserole

- 2 lb. ground beef
- 1 1/2 c. Minute rice
- 1 c. chopped bell pepper
- 2 cans chopped Ro-Tel tomatoes
- 1 head chopped cabbage
- 1 c. chopped onion
- 8 oz. grated Cheddar cheese
- salt and pepper to taste
Directions

1Preheat oven to 350°.

2Spray a large casserole dish with Pam. Place chopped cabbage in dish. Brown ground beef. Add bell pepper and onion.

3Drain.

4Combine remaining ingredients, except cheese. Pour over chopped cabbage.

5Bake 1 hour.

6Add cheese on top and bake until melted.
