Cabbage Casserole

  • 1 lb. ground beef
  • 1 medium onion, chopped
  • salt and pepper to taste
  • 1/2 c. rice, uncooked
  • 1/2 medium cabbage, coarsely shredded or 1/2 to 1 lb. pkg. cabbage salad mix
  • 1 can beef broth soup

Directions

    Brown meat and onion in skillet.

    Season to taste.

    Line bottom of 1 1/2 or 2-quart casserole with cabbage.

    Sprinkle rice over cabbage.

    Spread meat and onion mixture on top.

    Pour soup over all and bake, covered, at 350° for 1 to 1 1/2 hours, depending on kind of rice used (instant or fast cooking requires less time).

    Makes 6 to 8 servings.
