- 1 medium head cabbage, shredded coarsely
- 1 large bell pepper, chopped
- 1 large onion, chopped
- 3 oz. dry regular rice
- 2 tsp. chili powder
- 1 1/2 tsp. salt
- 1 can tomatoes
- 1 can Ro-Tel tomatoes
Directions

1Place ingredients in Dutch oven in order given.

2Cook 1 pound ground beef and drain well.

3Crumble over the top of first 6 ingredients.

4Pour over all the tomatoes.

5Cover and cook on high until it starts cooking, then turn to low and cook

6until rice is done and cabbage is tender.

7Do not lift lid except to check rice. It takes usually 30 to 40 minutes for rice to cook.

8When casserole is done, stir to blend flavors.
