Cabbage Casserole

Ingredients

  • 1 medium head cabbage, shredded coarsely
  • 1 large bell pepper, chopped
  • 1 large onion, chopped
  • 3 oz. dry regular rice
  • 2 tsp. chili powder
  • 1 1/2 tsp. salt
  • 1 can tomatoes
  • 1 can Ro-Tel tomatoes

Directions

    Place ingredients in Dutch oven in order given.

    Cook 1 pound ground beef and drain well.
  3. 3
    Crumble over the top of first 6 ingredients.
  4. 4
    Pour over all the tomatoes.

    Cover and cook on high until it starts cooking, then turn to low and cook
  6. 6
    until rice is done and cabbage is tender.

    Do not lift lid except to check rice. It takes usually 30 to 40 minutes for rice to cook.

    When casserole is done, stir to blend flavors.
