Ingredients
- 2 large onions, sliced
- 4 c. shredded cabbage
- 2 c. shredded carrots
- 1 c. sliced mushrooms
- 1/2 tsp. salt and pepper
- 2 Tbsp. vegetable oil
- 2 c. chopped celery
- 1 green bell pepper, chopped
- 2 Tbsp. sugar
- 2 large tomatoes, chopped
Directions

1Saute onions in oil in large skillet over medium heat until light brown, about 8 minutes.

2Stir in cabbage, celery, carrots, green pepper and mushrooms.

3Saute for 2 minutes; sprinkle with salt, pepper and sugar.

4Mix gently.

5Spoon tomatoes on top of vegetables.

6Cook, covered, over low heat, just until vegetables are crisp-tender, 6 to 8 minutes.
