Ingredients

  • 1 tablespoon extra virgin olive oil
  • 2 garlic cloves, minced
  • 12 cup yellow onion, chopped
  • 12 cup fresh carrot, chopped
  • 12 cup celery, chopped
  • 3 cups fat free low-sodium beef broth
  • 0.5 (6 ounce) can tomato paste
  • 2 cups shredded white cabbage
  • 12 cup fresh green beans, chopped
  • 12 teaspoon oregano
  • 12 cup frozen corn, thawed
  • 14 teaspoon salt
  • 18 teaspoon black pepper

Directions

    Saute garlic, onion, carrots and celery in olive on med-low heat until carrots and celery are soft.

    Be careful to not burn the garlic.

    Add broth, tomato paste, cabbage, beans, and oregano.

    Simmer for 5-10 minutes.

    Add corn.

    Bring back to a low simmer for 5-10 minutes.

    Add salt and pepper, simmer for 5-10 minutes.
