- 2 tablespoons vegetable oil
- 1/2 teaspoon mustard seeds
- 8 cups shredded cabbage
- 1/4 teaspoon ground turmeric
- 1/8 teaspoon chili powder (optional)
- 2 -3 tablespoons shredded unsweetened coconut
- salt
Directions

1Heat the oil in a large skillet.

2Add the mustard seeds.

3Lower the heat and cover the skillet while the seeds are popping.

4After the popping has stopped, add the cabbage.

5Stir well to coat.

6Cover and simmer 20 minutes.

7Add the turmeric, chili powder if desired, coconut and salt.

8Mix well.

9Cover and simmer 10 minutes more.

10Serve warm.

12Variation: To make Vegetable Toran, replace the cabbage with 6 cups frozen mixed vegetables.
