- 3 c. sugar
- 1 c. water
- 2 Tbsp. orange juice
- 1 Tbsp. lemon juice
Directions

1Select a small barrel cactus.

2Remove spines and green outside layer with sharp knife.

3Cut pulp across in slices 1 inch thick. Soak overnight in cold water.

4Remove from water; cut into 1-inch cubes and cook in boiling water until tender.

5Mix together the sugar, water and juices and add cactus.

6Cook slowly until nearly all syrup is dissolved being careful not to scorch.

7Remove cactus from syrup; drain and roll in powdered or granulated sugar.

8For colored candy, add vegetable coloring.
