- 2 pounds Nopal Cactus leaves, prepared and diced
- 1 pound tomatoes, chopped
- 6 ears Roasted corn from the oven, cut off the cob
- 2 pound Onions, sweet or sharp, or a combo, diced
- 1 bunch cilantro, chopped
- .5 cup jalapenos, raw, diced, seeds removed
- 6 cloves garlic, diced
- 1 can Black Beans, canned
Directions

1Prepare the cactus, chop and mix all ingredients, add some salt and black pepper to taste. A dash of olive oil is nice also. Allow to chill in the refrigerator for a few hours or overnight to blend flavors well.
