Ingredients
- 2 c. cognac
- 6 lumps sugar
- rind of 1/2 lemon
- rind of 1 orange
- 1 doz. whole cloves
- 2 c. strong black coffee
Directions

1In chafing dish, heat cognac with sugar and lemon rind.

2Peel orange so that skin remains in a strip 1-inch wide and about 8-inches long.

3Stick orange peel with cloves.

4Hold over chafing dish with fork.

5Pour 2 ounces cognac over orange peel, starting from top and allow to drip into pan.

6Ignite for a few moments, adding just enough additional cognac to keep flame lit.

7When flame goes out, place peel in chafing dish and simmer in hot mixture 4 to 5 minutes.

8Add coffee.

9Blaze some cognac on top and serve in demitasse cups.
