Ingredients

  • 1 Tablespoon Olive Or Vegetable Oil
  • 13 cups Onion, Chopped
  • 13 cups Green Pepper, Chopped
  • 13 cups Sweet Red Pepper, Chopped
  • 1 pound Kielbasa, Sliced
  • 2 teaspoons Cajun Seasoning Blend (I Used Penzey's)
  • 18 teaspoons Cayenne Pepper (Optional)
  • 1 can (14.5 Oz. Can) Diced Tomatoes With Liquid (Muir Glen Fire Roasted Is What I Used)
  • 1- 1/2 cup Chicken Broth
  • 3/4 cups Long Grain Rice

Directions

    In a large skillet over medium high heat, heat oil and add vegetables and kielbasa.

    Sprinkle Cajun seasoning and cayenne over the vegetables.

    Saute until onion is translucent, peppers have softened, and kielbasa is lightly browned.

    Add remaining ingredients, bring to a fast simmer, and cover.

    Cook for 20 minutes or until all liquid is absorbed.
