  • 1 1/2 pounds tiger shrimp
  • 1/4 cup cajun seasoning
  • 1 cup pineapple chopped small
  • 1 cup jicama chopped small
  • 1 cup cucumber chopped small
  • 1/2 cup red onion
  • 1/2 cup red onion

  • 1 cup mayo
  • 1/4 cup lime juice
  • 1/2 cup Sriracha

    Coat shrimp in cajun seasoning Set aside to marinate

    Chop pineapple, jicama, red onion, jalapeno, oranges and combine

    Add lime juice and salt to taste Set aside

    Combine mayo, sriracha, and lime juice

    Mix until smooth (Careful not to over whip)

    Sautee shrimp in 1 tbsp olive oil 4-5 minutes. The shrimp should be opaque, pink, with rbright pink/red tails

    Sriracha-lime mayo on tortilla Add 3 shrimp Top with 1 lg spoonful of citrus pico

    Feta is the preferred cheese here, but is undertandablythe more expensive option.
