  • 3 eggs
  • 1 c. sugar
  • 2/3 c. cooked pumpkin
  • 1 Tbsp. lemon juice
  • 1 Tbsp. baking powder
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 c. chopped walnuts
  • 1 tsp. ginger
  • 1 c. powdered sugar
  • 6 oz. cream cheese
  • 4 Tbsp. butter
  • 4 tsp. vanilla

Directions

    Beat eggs, sugar, pumpkin and lemon juice together.

    Mix flour, baking powder, cinnamon, nutmeg, ginger and salt.

    Fold in pumpkin. Pour in greased and floured 15 x 10 x 1-inch pan.

    Top with walnuts.

    Bake 15 minutes at 375°.

    Turn out on towel that is sprinkled with walnuts and powdered sugar.

    Roll cake and towel together.

    Let cool.

    Beat smooth the powdered sugar, cream cheese, butter and vanilla.

    Spread over cake.

    Roll up and chill.
