- 2 zucchini cut in lg. pieces
- 10 potatoes peeled and quartered

- 1 package corn-on-the-cob
Directions

1Boil meat and onion in a large stew pot full of water until tender.

2Add cabbage, carrots, zucchini.

3Cook about 25 minutes.

4Add potatoes and spices, cook about 10 to 15 minutes more.

5Add tomatoes and corn.

6Cook until vegetables are all done.

7Serve over Spanish rice, if desired.
