  • 1 onion
  • 4 packages beef shank
  • bone
  • 1 head cabbage cut in quarters
  • 6 carrots cut in lg. pieces
  • 2 zucchini cut in lg. pieces
  • 10 potatoes peeled and quartered
  • spices
  • cilantro
  • onion
  • 1 can tomatoes
  • 1 package corn-on-the-cob

Directions

    Boil meat and onion in a large stew pot full of water until tender.

    Add cabbage, carrots, zucchini.

    Cook about 25 minutes.

    Add potatoes and spices, cook about 10 to 15 minutes more.

    Add tomatoes and corn.

    Cook until vegetables are all done.

    Serve over Spanish rice, if desired.
