Ingredients

  • 2 Tbsp. butter or margarine
  • 1 large onion, sliced
  • 1 medium clove garlic, crushed
  • 2 (1 lb. each) cans tomatoes, drained and chopped
  • 2 Tbsp. lime juice
  • 1/2 tsp. salt
  • 1/2 tsp. ground coriander
  • 1/2 tsp. ground turmeric
  • 1/4 tsp. ground ginger
  • 1/4 tsp. ground cumin
  • 1/8 tsp. ground red pepper
  • 1 lb. large shrimp, peeled and deveined
  • cooked white rice
  • chutney (optional)

Directions

    In large skillet, over medium heat, melt butter.

    Saute onion and garlic until tender, about 3 minutes.

    Add remaining ingredients, except shrimp, rice and chutney; bring to boiling. Reduce heat; simmer, covered, 15 minutes.
