- 2 Tbsp. butter or margarine
- 1 large onion, sliced
- 1 medium clove garlic, crushed
- 2 (1 lb. each) cans tomatoes, drained and chopped
- 2 Tbsp. lime juice
- 1/2 tsp. salt
- 1/2 tsp. ground coriander
- 1/2 tsp. ground turmeric
- 1/4 tsp. ground ginger
- 1/4 tsp. ground cumin
- 1/8 tsp. ground red pepper
- 1 lb. large shrimp, peeled and deveined
- cooked white rice
- chutney (optional)
Directions

1In large skillet, over medium heat, melt butter.

2Saute onion and garlic until tender, about 3 minutes.

3Add remaining ingredients, except shrimp, rice and chutney; bring to boiling. Reduce heat; simmer, covered, 15 minutes.
