Ingredients
- olive oil
- 1 red onion, thinly julianne sliced
- 1/2 cup green bell pepper, julianne sliced
- 1 cup red bell pepper, julianne sliced
- 1/2 cup yellow bell pepper, julianne sliced
- 1/2 cup cilantro, finely chopped
- 1 1/2 lbs cambray potatoes or 1 1/2 lbs red potatoes
- 1 tablespoon paprika
- 2 garlic cloves, finely sliced
- salt, to taste
Directions

1Boil potatoes in enough water with salt.

2Drain.

3In large skillet add olive oil, potatoes, onions, green bell peppers, red bell peppers, yellow bell peppers, cloves, paprika and salt to taste.

4Let simmer a few minutes, while turning occassionally.

5Remove from heat.

6Serve in large serving bowl and decorate with the cilantro.
