- 1/2 pound bacon, diced
- 1 medium onion, chopped
- 1 medium-size green pepper, seeded and chopped
- 2 1/2 pounds potatoes, scrubbed and sliced
- 1 (10-ounce) can tomatoes with chiles
- Salt and pepper to taste
Directions

1Cook bacon in a large skillet until browned. Add onion and green pepper; saute until tender. Drain off fat, if desired.

2Add potatoes and tomatoes, stirring lightly. Reduce heat; cover and simmer 15 minutes or until potatoes are tender. Add salt and pepper to taste.
