- 8 slices bacon
- 1 1/2 c. frozen hash browns
- 1/4 c. onions, chopped
- 1/4 c. green pepper, chopped
- 1/4 tsp. salt
- dash of pepper
- 6 eggs
- 1/3 c. milk
- 1/2 c. shredded Cheddar cheese
Directions

1In a heavy 10-inch skillet, arrange bacon slices.

2Cook until bacon is crisp.

3Remove and crumble bacon.

4Pour off all but 2 tablespoons fat.

5Add potatoes to skillet.

6Sprinkle with a dash of salt and pepper.

7Return to stove and stir-fry until potatoes are light brown.

8Beat eggs, milk, 1/4 teaspoon salt and dash of pepper.

9Pour over potatoes.

10Cook without stirring until mixture begins to settle on bottom and around edges; stir.

11Cook about 4 minutes.

12Arrange crumbled bacon on top.

13Sprinkle with cheese. Makes 4 servings.
