Candied Carrots

  • 1 lb carrots, cut into 2 inch pieces
  • 2 tbsp butter, diced
  • 1/4 cup packed brown sugar
  • pinch salt
  • pinch black pepper

Directions

    1. Bring large pot of water to a boil. Add carrots and reduce heat to a high simmer. Cook about 20 minutes. Do not allow carrots to become mushy. Drain.

    2. Reduce heat to low and return carrots to pan, stir in butter, brown sugar, salt and pepper. Cook for 3-5 minutes or until sugar is bubbly. Serve hot.
