  • 1/2 cup unsalted butter, softened
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 tsp pure vanilla extract
  • 1 1/4 cup all-purpose flour
  • 2/3 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup whole milk, full fat
  • 1/2 cup salted butter
  • 3 cup powdered sugar
  • 1/2 cup creamy peanut butter
  • 3 tbsp heavy cream
  • 1/3 cup chopped peanuts

Directions

    Cream butter and sugar until light and creamy for THREE minutes.

    Add eggs one at a time until incorporated.

    Add in vanilla.

    In a large bowl combine dry ingredients.

    Mix to combine.

    Get milk ready.

    Add half the dry ingredients add mix one minute.

    Add half the milk, mix another minute.

    Add rest of dry and mix then rest of milk.

    Beat together until just incorporated.

    Preheat oven to 375F fahrenheit.

    Prepare 18 paper cupcake liners in muffin tins.

    Add battery to 2/3 way full in cupcake liners.

    Bake for 12-15 minutes.

    Let cool on a rack while starting frosting.

    Mix butter and peanut butter until smooth.

    Add in powdered sugar and beat until incorporated.

    Mix in heavy cream until combined.

    Once cupcakes have cooled, frost the cupcakes.

    Sprinkle with chopped peanuts, and enjoy.
