- 1 lb. beef
- 1 (14.5 oz.) can diced tomatoes, drained
- 1 (7 oz.) can whole kernel corn, drained
- 1/2 c. water
- 1 (1 1/4 oz.) pkg. taco seasoning mix
- 1 c. self rising flour
- 1/2 c. milk
- 2 Tbsp. oil
- 1 egg
- I cup shredded cheddar cheese
Directions

1Heat oven to 400.

2Grease 8 inch square glass baking dish. Brown ground beef in a large skillet over medium-high heat until thoroughly cooked, stirring frequently.

3Drain.

4Add tomatoes, corn, water, and taco seasoning mix.

5Mix well.

6Bring to a boil, stirring occasionally.

7Pour into the greased baking dish.

8In a small bowl, combine corn meal mix, milk, oil, and egg.

9Blend well.

10Stir in cheese.

11Pour batter over ground beef mixture in baking dish.

12Bake at 400 for 30 to 35 minutes or until the topping is golden brown.
