Cape Cod Fish Chowder(Low-Cal)

- 2 Tbsp. oil
- 1/2 c. chopped onion
- 1/4 tsp. thyme
- 1 c. diced potatoes
- 3/4 lb. flounder filets, cut into small chunks
- 1/2 lb. scallops
- 2 c. skim milk
- 1 Tbsp. cornstarch
- salt and pepper to taste
Directions

1In a large saucepan, heat oil. Add onion and saute. Add thyme and potatoes. Saute 1 more minute. Add water and bring to a boil. Reduce heat and simmer for 10 minutes.

2Add flounder and scallops. Cook, covered, about 8 minutes.

3Combine milk, cornstarch, salt and pepper.

4Mix well. Stir into soup and cook 5 minutes longer, stirring occasionally.
