Ingredients

  • 1/3 c. olive oil
  • 1/2 green pepper, cubed
  • 1 medium onion, chopped
  • 1 medium peeled eggplant, cubed
  • 3 to 4 large cloves garlic, chopped
  • 6 oz. tomato paste
  • 2 Tbsp. wine vinegar
  • 1/2 c. sliced stuffed olives
  • 1 1/2 tsp. sugar
  • 1/2 tsp. oregano
  • 1 tsp. salt
  • dash of pepper
  • 1 (4 oz.) can mushrooms, drained, or fresh

Directions

    Saute in oil the cubed pepper, chopped onion, cubed peeled eggplant and chopped garlic for 10 to 15 minutes.

    Mix together tomato paste, vinegar, olives, seasonings and mushrooms; combine with sauteed mixture.

    Cover; simmer for 20 to 30 minutes; stir occasionally.
