Caprese Lasagna Roll-ups

Ingredients
- 1 lb dry lasagna noodles
- 15 oz ricotta cheese
- 1 large egg
- 4 oz shredded motzarella cheese
- 10 roma tomatoes, thin sliced
- 2 can spinach (drained and squeezed) 13.5oz. each
- 2 24 oz. jars spagetti sauce (may not use all)
- 1 grated parmesan for sprinkling
- 1 dried basil for sprinkling
- 12 oz shredded motzarella cheese
Directions

1Cook lasagna noodles according to package directions.

2Do not rinse!

3Just drain.. you need the stickyness of the starch to stay on the noodles to aid in rolling.

4Preheat oven to 375F

5Using a large baking sheet.. spread a thin layer of spagetti sauce over entire sheet.

6Set aside.

7Line work surface in wax paper or parchment paper.

8Lay out each noodle onto paper in a single file.

9Spread a couple tbl.
-
10Of ricotta mix along each noodle as pictured.

11Its ok if u dont cover the entire thing.

12Lay out a few slices of tomato across the ricotta.

13Leaving a small space between each and leaving a small space at each end.

14To make for easy rolling.
-
15Break apart small pieces of spinach and sprinkle accross tomatoes.

16Sprinkle basil across the length of the noodle.

17Just a light sprinkle.
-
18Do the same with the parmesan.
-
19Really as much as you would like.
-
20Gently but firmly.. starting at one end, roll the lasagna noodle up.

21Not to tight or it will all push out the sides.

22Transfer roll to on top of prepared baking sheet.

23Repeat until out of ingredients.

24Now spoon sauce over each roll, as much as u would like.

25But i did a big serving spoonful on each.

26Now sprinkle motzarella cheeese on top of each.

27About a small handful.
-
28More if u like more, but itll get messy if u put to much sauce/cheese.

29Again take the basil and parmesan and give another light sprinkle to the top of each roll..

30Bake in oven for 10-15 min.

31Closest to heat.

32Just long enough to heat it up and let the cheese melt.

33If the ricotta is starting to ooze out.. its done!

35Transfer to serving plates.

37I served mine with homemade garlic bread and a nice italian side salad.
