- 2 c. apples, peeled and chopped
- 1/4 c. caramel ice cream topping
- 2 (8 oz.) pkg. cream cheese, softened
- 1 c. sugar
- 1 1/4 tsp. vanilla
- 3 eggs
- pastry for 9-inch pie crust, unbaked
Directions

1Place crust in 9-inch pie pan.

2Turn under edges and flute. Place apples in bottom of unbaked crust; cover with caramel topping.

3In a bowl, combine cream cheese, sugar and vanilla, mixing well until blended.

4Add eggs, one at a time, mixing well after each addition.

5Pour this mixture over caramel topping. Bake at 325° for 45 minutes.

6Chill.

7To serve, garnish with additional caramel topping.
