Caramel Bread Pudding

- 2 Tbsp. butter or margarine
- 1 1/2 c. firmly packed brown sugar, divided
- 6 slices white bread, cut in 1/2 inch cubes
- 6 eggs
- 1 tall can (12 oz.) Pet evaporated milk
- 1/3 c. water
- 1 tsp. vanilla
- 1/8 tsp. salt
Directions

1Preheat oven to 325°.

2Butter a shallow 1 1/2-quart casserole dish.

3Dot bottom with remaining butter.

4Sprinkle 1 cup sugar over bottom.

5Top with bread cubes.

6Beat eggs with wire whisk.

7Stir in remaining 1/2 cup sugar, evaporated milk, water, vanilla and salt. Pour over bread cubes.

8Do not stir.

9Place casserole in larger pan.

10Pour hot water into pan one inch deep.

11Bake for 45 to 50 minutes or until knife inserted one inch from edge comes out clean. Serve warm or cold.

12Makes 6 to 8 servings.
