- 2 c. sugar, divided
- 1 c. boiling water
- 2 Tbsp. all-purpose flour
- 5 eggs, separated
- 2 c. milk
- 1 c. chopped peanuts
- 1 tsp. vanilla extract
- 2 baked 9-inch pastry shells
- 1/4 c. sugar
Directions

1Place 1 cup sugar in a heavy skillet; cook over medium-high heat, stirring constantly, until sugar melts and forms a light brown syrup.

2Reduce heat to low; gradually add boiling water in a slow stream, stirring constantly with a wire whisk.

3Remove from heat.

4Combine 1 cup sugar and flour in a heavy saucepan; stir well.

5Add egg yolks, milk and caramelized sugar mixture; stir well.

6Cook over low heat, stirring constantly, until mixture thickens.

7Stir in the chopped peanuts and vanilla.

8Pour into pastry shells.
