Caramel Pecan Pie

Ingredients

  • 14 caramels
  • 1/4 c. hot water
  • 1/4 c. butter
  • 1/2 c. sugar
  • 1/4 c. flour
  • 1/8 tsp. salt
  • 2 eggs, beaten
  • 1 c. evaporated milk
  • 1/4 tsp. vanilla
  • 1 c. pecans, chopped or halves
  • 1 unbaked pastry shell

Directions

    Melt caramels in hot water in top of double boiler over boiling water.

    Let cool.

    In large bowl, cream butter.

    Add sugar about 2 tablespoons at a time.

    Cream until light and fluffy. Beat in flour, salt and beaten eggs.

    Stir in the melted caramels. Add milk, vanilla and pecans.

    Pour into unbaked shell.

    Bake in 425° oven for 15 minutes which has been preheated.

    Turn oven off and let set in oven 15 minutes.
