  • 500 g baby potatoes
  • 75 g dark brown sugar
  • 50 g butter
  • 1 orange
  • salt & pepper
  • chopped fresh parsley

Directions

    Boil the potatoes until nearly soft - for 10 - 15 minutes.

    Meanwhile, remove the zest from the orange and set that aside; squeeze the orange and retain juice.

    Melt the brown sugar in a wok or pan, stirring continuously, then add the butter and orange juice and continue stirring.

    Now, add the strained potatoes to the sauce and continue stirring until the sauce becomes caramel.

    Serve with the orange zest and parsley scattered on top.
