  • 2 Tablespoons Peanut Oil
  • 2 whole Skinless Salmon Fillets (about 0.75 Lbs Each)
  • 2 pinches Salt
  • 2 pinches Black Pepper
  • 1/2 whole Lime, Juiced
  • 1/2 cups Cilantro, Chopped
  • 1 bunch Green Onions, Chopped
  • 3 Tablespoons Brown Sugar
  • 1 Tablespoon Minced Ginger
  • 2 Tablespoons Fish Sauce
  • 1 Tablespoon Soy Sauce
  • 2 Tablespoons Dry Sherry
  • 1 dash Red Pepper Flakes

    First, assemble the sauce: mix brown sugar, ginger, fish sauce, soy sauce, sherry, and red pepper flakes.

    Spread oil all over salmon pieces, then sprinkle on salt and pepper.

    Heat the remaining oil in a non-stick skillet over high heat.

    When the pan is nice and hot, add the salmon pieces.

    Cook for 1 minute, then gently flip using a sturdy spatula (to avoid breaking the salmon).
