- 2 boneless skinless chicken breasts, cut in strips
- salt and pepper
- olive oil flavored cooking spray
- 1 medium onion, sliced
- 1/4 cup strawberry jam
- 1 tablespoon red wine vinegar
- 1 tablespoon low sodium soy sauce
- 1 teaspoon fresh ginger, grated
- 1/2 teaspoon rosemary
Directions

1Sprinkle the chicken with salt and pepper.

2Spray the onions and a large frying pan with kitchen spray.

3Saute the onions for 2 minutes, then add chicken to the pan.

4Continue cooking an additional 8 minutes or until chicken is no longer pink.

5Remove both onions and chicken from the pan.

6Add the jam and remaining ingredients to the pan, and cook for 2 minutes, stirring constantly.

7Return chicken and onions to the pan and continue cooking for 4 minutes, stirring occasionally.
