Ingredients

  • 1 chorizo sausage
  • 1/2 roasted potato
  • 1/2 orange pepper
  • 1/2 yellow pepper
  • 1/2 green pepper
  • 1/2 cup green beans
  • 1/2 can sweetcorn
  • 1 cup risotto rice
  • 1/2 cup lardons
  • 1 tbsp olive oil
  • 2 clove garlic
  • 1 can tomatoes

Directions

    Bring oven to temperature and roast the potato for 25 minutes

    Slice chorizo into 1 cm thick pieces and fry in a large pan in olive oil
  3. 3
    Add in lardons when mostly done, and then garlic
  4. 4
    Add in the peppers and fry until softened.

    Then the green beans and sweetcorn
  6. 6
    Slice potato into cubes and add this, too.

    Fry until coated in oil

    Add a can of chopped tomatoes, then fill half of it with water and add this too

    Add the rice.

    Stir in well, then cover the pan and let it sit for 20 minutes, or until the rice has absorbed all the water.
