- 34 cup butter
- 2 cups brown sugar
- 3 eggs
- 2 teaspoons vanilla
- 2 cups zucchini, grated
- 2 cups flour
- 14 cup carob powder
- 2 12 teaspoons baking powder
- 1 12 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 12 cup milk
- 1 cup pecans, chopped
Directions

1Cream the butter and sugar together until smooth.

2Beat in eggs one at a time.

3Stir in vanilla and grated zucchini.

4sift flour, carob, baking powder and soda, salt and cinnamon together.

5Stir into creamed ingredients alternately with milk.

6Stir in nuts.

7Pour batter into a greased and floured 10 inch tube or bundt pan.

8Bake in a preheated 350F oven for 50-60 minutes, until a toothpick inserted in the centre comes out clean.
