- 1 small onion, chopped
- 1/2 c. margarine
- 1 can whole kernel corn, drained
- 1 can cream-style corn
- 1 box Jiffy corn muffin mix
- 3 eggs
- 1 c. sour cream
- 1 c. shredded Cheddar cheese
Directions

1Mix sour cream and Cheddar cheese together; set aside.

2Saute onion in margarine; set aside.

3Mix corn, muffin mix and eggs; add onions.

4Pour into greased casserole.

5Top with sour cream/cheese mixture.

6Bake, uncovered, 45 minutes at 350°.
